  Mulberry Muffins Muffins and cupcakes are kids all time favorite to bake. I love baking at all times and this is the recipe which I tried today and of course the muffins came out soft and spongy. Baking is always been a stress buster for me. Try this recipe and I can guarantee that it will not disappoint you in anyway. Ingredients: 🍰  Maida / All purpose flour-1 cup   🍰 Eggs -2 🍰 Sugar- 3/4 cup 🍰 Butter- 100grams (salted) 🍰 Baking powder- 1tsp 🍰 Milk- 1/4 cup 🍰  Vanilla essence- 2tsp 🍰 Mala's mulberry crush - as per your taste How to make ?? 🍰 Beat the butter well in a large bowl with a whisk 🍰 Add sugar and whisk until well combined 🍰 Add eggs one by one and mix well 🍰 Sift and add maida and baking powder  into the butter sugar mixture 🍰 Fold everything slowly until maida is combined with the rest of the ingredients 🍰 Add milk  🍰 Add vanilla essence and fold the mixture 🍰 Muffin batter is ready 🍰 Preheat oven at 175c for 10minutes 🍰 Fill the muffin cups with 3

Country Chicken Dum briyani (One Pot)

Briyani is always been an emotion of many. There is no special occasion without a briyani too. Briyani is a mixed rice dish originating among the Muslims of the Indian subcontinent. It is made with Indian spices, rice and meat. There are various styles of briyani from various regions.

We will be seeing the recipe of Country Chicken Dum briyani . Let's get started !! 





From the store ?? 

  • Basmati rice 1/2 kg
  • Country Chicken 1/2 kg 
  • Oil 100ml ( Rice bran or refined oil )
  • Onion 200g
  • Tomato 200g
  • Cinnamon 1g
  • Cardamom 1g 
  • Clove 1g 
  • Pandan leaves 
  • Coriander leaves 1/2 hand 
  • Mint leaves 1/2 hand 
  • Ginger garlic paste 75g 
  • Red chilli powder 1 tblspn 
  • Salt 1tblspn
  • Curd 100ml
  • Green chillies 2 or 3
  • Lemon 1/4th  

In the kitchen ?? 

πŸ‘‰ Rinse 1/2kg basmati rice two to three times and soak in water for about 1/2 hour




πŸ‘‰ Clean 1/2kg chicken and keep it aside to dry


πŸ‘‰ In a large vessel, pour 100ml of oil and add onion, cardamom, cloves, cinnamon and pandan leaves. Fry till onions turn reddish brown
 



πŸ‘‰ Drop in coriander and mint leaves. This gives a very good flavour to your briyani 

πŸ‘‰ Add ginger garlic paste and stir it for 10 seconds until the raw smell goes away

πŸ‘‰ Add red chill powder and chillies and stir for 10 seconds. 

πŸ‘‰ Add curd and stir it.

πŸ‘‰ Drop in the tomatoes and give it a mix for 5 minutes. You can find the oil oozing out


πŸ‘‰ Splash salt as given or as per your taste

πŸ‘‰ Pour 750ml of water and cover it with a lid. Let it boil for 2 minutes in high flame and 5 to 6 minutes in low flame 



πŸ‘‰ Add chicken pieces and stir it will for 10 seconds so that masalas get mixed well. Cover it for 2 minutes and cook


πŸ‘‰  Add the cleaned rice and give it a quick stir. Make sure to stir it gently so that the chicken pieces and rice doesn't break


πŸ‘‰ Close the vessel with a lid and allow it to boil for one minute in high flame and then open , give it a quick stir

πŸ‘‰ It's time to check for salt and spice. If needed , adjust it as per your taste. Squeeze 1/4th lemon for extra sourness of needed 

πŸ‘‰ Make sure the rice and chicken pieces are under water. Close the vessel tightly by placing a weight on top and leave it for 15 minutes in low flame 


πŸ‘‰ After 15 minutes, open the lid and your Dum briyani is ready to be served hot !!
