  Mulberry Muffins Muffins and cupcakes are kids all time favorite to bake. I love baking at all times and this is the recipe which I tried today and of course the muffins came out soft and spongy. Baking is always been a stress buster for me. Try this recipe and I can guarantee that it will not disappoint you in anyway. Ingredients: 🍰  Maida / All purpose flour-1 cup   🍰 Eggs -2 🍰 Sugar- 3/4 cup 🍰 Butter- 100grams (salted) 🍰 Baking powder- 1tsp 🍰 Milk- 1/4 cup 🍰  Vanilla essence- 2tsp 🍰 Mala's mulberry crush - as per your taste How to make ?? 🍰 Beat the butter well in a large bowl with a whisk 🍰 Add sugar and whisk until well combined 🍰 Add eggs one by one and mix well 🍰 Sift and add maida and baking powder  into the butter sugar mixture 🍰 Fold everything slowly until maida is combined with the rest of the ingredients 🍰 Add milk  🍰 Add vanilla essence and fold the mixture 🍰 Muffin batter is ready 🍰 Preheat oven at 175c for 10minutes 🍰 Fill the muffin cups with 3

Prawn briyani

Prawn Briyani ?  ( இறால் பிரியானி)

Prawns will absolutely be everyone’s favorite. This recipe is must try n for beginners. It can be done in no time.









Ingredients:
For marinating prawns:
  • 250 grams prawn, cleaned & deveined
  • 1tspn red chilli powder
  • 1/2 tspn turmeric powder
  • 1/2 tspn salt
For making briyani masala:
  • 1 1/2 cup basmati rice
  • 4tblspn coconut oil
  • 1cup onion
  • 1tblspn ginger garlic paste
  • 3 green chillies
  • salt to taste
  • 3 tomatoes chopped
  • mint leaves
  • coriander leaves
  • 1/4 cup curd
  • 1tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1tsp coriander powder
  • 1/2 tsp cumin powder

The prawns should be marinated before preparing briyani. Add the deveined prawns in a bowl with turmeric, salt and red chilli powder and let it sit for 20 to 30 minutes. 



Wash and soak basmati rice in water. I use brands like INDIA GATE and LAL QILA in home.



Heat coconut oil in a pan and add marinated prawns, let it cook for 3-4 minutes. Remove the prawns and set aside.


In the same oil, add in the onions.
Add the salt and saute for 2-3 minutes till the onions are soft.



Add ginger garlic paste, green chillies and saute well. Add in the tomatoes, coriander and mint leaves.


Add the curd. This will give tangy flavour to your briyani.


Add red chilli, turmeric, cumin and coriander powder.
close the lid and cook for about 10 minutes till the oil seperates. 
Add the fried prawns. Mix well and switch off the flame.


Transfer the prawn masala to a rice cooker. Add basmati rice and water (4 cups). Check for salt and add it accordingly. 
Once it is cooked, Prawn briyani is ready to be served hot with raita.

NOTES: 

  • Prawn briyani can also be cooked in pressure cooker for 2 whistles.
  • Water is taken in the ratio of 1:2 ( for 1cup of rice, 2 cups water is used).
